Steam cooking with double bottom made of 316 L stainless steel with steam heating.
Heating the product takes place through an interspace placed under the spherical wall of the bottom, in which the steam is injected. The particular conformation of the interspace is designed to achieve an excellent heat exchange that allows a rapid and uniform heating of the product.

The construction is characterized by:

- Thermal insulation to avoid heat dispersion to the outside, made of high density mineral wool, stainless steel plate coated, waterproof, and therefore washable also with high pressure systems.
